Bake cauliflower for 30-40 minutes on 400 degrees. Massage a little olive oil and herbal seasoning before you put in oven. This is a great way to avoid starchier foods as you transition away from them.

Good question Kim! I would think frozen would have a harder time as it thaws. Two things would be happening at the same time: The frozen vegetable would be thawing as the oil tries to bake from the outside. May be a little soggy but I'm not really sure. Try it and let us know and if all else fails try a fresh head next time. Peace sista
